Devil’s food cake first appeared in the early 1900’s in the United States. Unlike other chocolate cakes, Devil’s Food Cake is very light and moist due to the recipe requiring boiling water in place of milk and a healthy dose of baking soda.

Devi’s Food Cake

2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
2 teaspoons baking soda
3/4 cup nonalkalized cocoa powder (not Dutch-processed)
2 cups sugar
1 cup applesauce
1 cup hot coffee
1 cup milk
2 large eggs
1 teaspoon vanilla


15 ounces semi-sweet chocolate, finely chopped
1 1/2 cups heavy cream




Put the semi-sweet chocolate in a large heatproof bowl.

In a small saucepan, bring the cream to a boil. Pour the cream over the chocolate, move the bowl gently to let the cream settle. Set the mixture aside until softened, about 4 minutes. Whisk until smooth. Cover the surface of the frosting with plastic wrap. Set aside and let set up at room temperature, about 2 hours.

1 Preheat oven to 325°F.
2 In a large mixing bowl, sift together dry ingredients. Add applesauce, coffee and milk and mix at medium speed for 2 minutes. Add eggs and vanilla and beat 2 more minutes. Expect batter to be thin.
3 Pour into a 9″ x 13″ greased and floured pan or 2- 9″ round pans. Bake 9 x 13 pan for about 45 minutes or 9″ pans for about 30 minutes. Cool in pans for about 15 minutes and then cool completely on racks.
4 Frost cooled cake and enjoy!

Note: This cake is excellent served chilled and right out of the fridge.
